12 Days of Recipes: Christmas Date Pudding

Christmas Date PuddingI love this time of year: getting together with family and friends, giving gifts, and sharing our favorite things. One of the favorite things I like to share and have shared with me are recipes.

Today I’m sharing an old family dessert recipe that is a favorite for Christmas dinner.

 

 

CHRISTMAS DATE PUDDING

 

Ingredients

1 1/2 c brown sugar
1 1/2 x boiling water
1 c sugar
1 t baking powder
1/2 t salt
1 c flour
1/2 c dates (chopped)
1/2 c nuts (chopped)
1 t vanilla
Whipped topping

 

Instructions

  1. Dissolve brown sugar in boiling water.
  2. Mix sugar, flour, and milk together.
  3. Add nuts, dates, baking powder, and salt.
  4. Pour dissolved water into mixture in 11 x 7-inch baking dish.
  5. Add other mixture, DO NOT STIR.
  6. Bake 30 minutes at 450 degrees.
  7. Serve warm with whipped cream.

 

Servings: 12-15

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

12 Days of Recipes: Christmas Breakfast Casserole

Christmas Breakfast CasseroleI love this time of year: getting together with family and friends, giving gifts, and sharing our favorite things. One of the favorite things I like to share and have shared with me are recipes.

Today I’m sharing one of my breakfast recipes that is a favorite with my family.

 

CHRISTMAS BREAKFAST CAEEROLE

 

 

Ingredients

12 eggs
1/2 c milk
1 lb sausage (pork, breakfast, vegetarian substitute)
1 c chopped onions
1 c chopped green peppers
1 c chopped mushrooms
8 oz cream cheese (softened)
2 8-oz cans crescent rolls
2 c shredded cheddar cheese
Salsa (optional)

 

Instructions

Preheat oven to 375 degrees.

  1. In medium bowl, beat eggs until foamy and add milk.
  2. In skillet, scramble eggs and set aside.
  3. In skillet, brown sausage. Add green peppers, onions, and mushrooms. Cook a couple of minutes longer.
  4. Add cream cheese and cook until melted into the mixture.
  5. Add scrambled eggs and combine.
  6. In an ungreased 13 x 9-inch baking dish, line bottom with 1 can of crescent rolls. Press down and seal edges.
  7. Spread sausage/egg mixture on top.
  8. Top with shredded cheese.
  9. Top all with remaining can of crescent rolls.
  10. Bake 25 minutes.
  11. Serve with salsa, if desired.

*NOTE: Filling can be made ahead of time and stored in refrigerator until ready to bake casserole.

Servings: 8-10

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Pistachio Marshmallow SaladI love the holiday season, especially getting together with family and friends. And I love sharing wonderful goody recipes this time of year.

Today I am sharing one of my salad recipes, a favorite with family and friends.

 

PISTACHIO MARSHMALLOW SALAD

 

 

 

Ingredients

20 oz can crushed pineapple
1 pkg instant pistachio pudding
1 c chopped nuts
1 c miniature marshmallows
9 oz carton whipped topping

 

Instructions

  1. In large bowl, fold pudding mix into whipped topping.
  2. Add pineapple juice and pineapple.
  3. Mix in marshmallows and nuts.
  4. Refrigerate.

 

Servings: 4-6

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

StreuseltalerI love this time of year: getting together with family and friends, giving gifts, and sharing our favorite things. One of the favorite things I like to share and have shared with me are recipes.

Today I’m sharing one of my dessert pastry recipes that is a favorite with my family.

 

STREUSELTALER

 

 

Ingredients

CAKE BASE:
2 c flour
1 pkg dry yeast
1/2 c white granulated sugar
1/2 t salt
3+1/2 T butter
1 egg
1/2 c + 2 T warm milk

STREUSEL:
2 c flour
1 c butter, cut into small pieces
1 +1/3 c white granulated sugar
2 T vanilla sugar

JAM:
Recommend one small jar of blackberry and one small jar of apricot

GLAZE (optional):
2 c flour
1 c butter, cut into small pieces
1 +1/3 c white granulated sugar
2 T vanilla sugar

Instructions

Cake Base Directions:

  1. Whisk together the flour, sugar, salt and yeast in the bowl of a mixer.
  2. Add the butter, egg and milk and mix.
  3. When dough is smooth, remove bowl from mixer, cover and leave in a warm place for 20 minutes.
  4. Return the bowl to the mixer and knead again until the dough is smooth and elastic.

Streusel Directions:

  1. Whisk flour and sugars together.
  2. Add butter and knead everything together with your hands until you have one big ball of streusel.

Glaze Directions:

  1. In a saucepan, heat sugar and water together whisking until sugar is dissolved and mixture is smooth.
  2. Keep mixture warm until ready to use so it doesn’t harden and crack.

Streuseltaler Directions:

  1. Preheat oven to 350 degrees F.
  2. Line two baking sheets with parchment paper.
  3. Sprinkle flour on a work surface.
  4. Divide the dough into 16 equal pieces.
  5. Take a piece and roll into a ball between your hands.
  6. Use a rolling pin to roll out a circle 4″ in diameter. The thickness should be less than a raw sugar cookie cutout but not paper thin.
  7. Place on a baking sheet and repeat with the rest of the dough.
  8. Break off a handful of streusel from your big crumb and sprinkle on each disk, really pile it on.
  9. If you want to add jam, spoon it onto the streusel and then sprinkle a few streusel crumbs on top.
  10. Bake for about 10 minutes or until the edges just start to turn golden.
  11. Remove from oven and leave them on the baking sheets for about 10 minutes.
  12. For the plains ones, brush on a thick layer of glaze coating the entire streuseltaler.
  13. Transfer to a wire rack to cool completely.
  14. These are best if eaten within 2 days.

Prep Time: 45 minutes

Cook Time: 10 minutes

Total Time: 55 minutes

Today I’m sharing one of my dessert salad recipes that is a favorite with my family and friends.

 

CHERRY PIE FILLING SALAD

 

Ingredients

1 can cherry pie filling
1 can crushed pineapple (drained)
1 can sweetened condensed milk
1 med. frozen whipped topping (thawed)
1/2 c pecans
1 c miniature marshmallows

 

Instructions

  1. In large bowl, mix together cherry pie filling, pineapple, and pecans.
  2. Fold in condensed milk, whipped topping, and miniature marshmallows.
  3. Freeze well.
  4. Set out just before serving.

 

Servings: 6-8

Prep Time: 10 minutes

Cook Time: 2 hours

Total Time: 2 hours, 10 minutes

Today I’m sharing one of my low sugar cookie recipes that is a favorite with my husband, family, and friends.

 

LOW SUGAR OATMEAL COOKIES

 

Ingredients

1-1/2 cups butter, softened
1-1/3 cups white sugar/Splenda mix
1-1/2 cups packed brown sugar/Splenda mix
3 eggs
1-1/2 teaspoons vanilla extract
3 cups whole wheat flour
1-1/2 teaspoons baking soda
1-1/2 teaspoons salt
2 teaspoons ground cinnamon
4-1/2 cups quick cooking oats

 

Instructions

  1. Preheat oven to 375 degrees F. Grease cookie sheets.
  2. In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla.
  3. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture.
  4. Mix in oats. Cover, and chill dough for at least one hour.
  5. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
  6. Bake for 8 to 10 minutes.
  7. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

 

Servings: 3 dozen

Prep Time: 10 minutes + 1 hour

Cook Time: 10 minutes

Total Time: 20 minutes + 1 hour

Today I’m sharing one of my older cookie recipes that has been a favorite with my husband, family, and friends.

 

BUTTERBALLS

 

Ingredients

3/8 c. butter (softened)
2 T. butter
1/4 T. salt
1/2 c. baking powder
1 1/2 c. flour
1/2 c. sugar
1 t. vanilla
1 egg
1/2 c. chopped nuts
Powdered sugar

Instructions

  1. Preheat over to 375 degrees.
  2. In large bowl, combine 3/8 c. butter, salt, baking powder, flour, sugar, 2 T. butter, vanilla, and egg.
  3. Blend until stiff dough.
  4. Blend in nuts.
  5. Shape dough into 3/4 inch balls.
  6. Bake on ungreased cookie sheet for 11-16 minutes.
  7. Cool slightly and roll in powdered sugar.

 

Servings: 3 dozen

Prep Time: 15 minutes

Cook Time: 12 minutes

Total Time: 31 minutes

Today I’m sharing one of my plain but tasty cookie recipes is a favorite with family and friends.

 

 

MELT-IN-YOUR-MOUTH GINGERBREAD COOKIES

Ingredients

1 c margarine
1 1/2 c brown sugar, packed
2 eggs, beaten
1 T ground ginger
1/2 c molasses
1 1/2 c boiling water
1 1/2 t baking soda
5 c flour
2 t baking powder
1 1/2 t salt
1 T cinnamon
1 c chopped nut (optional)

 

Instructions

  1. Preheat over to 425 degrees F.
  2. Cream margarine and brown sugar in a large bowl.
  3. Blend in beaten eggs.
  4. Mix in ginger and molasses.
  5. Stir in boiling water.
  6. Combine flour, baking soda, baking power, salt, and cinnamon in large bowl. Add to sugar mixture.
  7. Drop by teaspoonfuls onto ungreased baking sheets.
  8. Bake for 7-8 minutes.
  9. Cool for 1 minute on baking sheet, then cool completely on wire racks.

 

Servings: 5 dozen

Prep Time: 10 minutes

Cook Time: 7-8 minutes per sheet

Total Time: 45 minutes

GERMAN CHOCOLATE COOKIES

 

Ingredients

1 pkg (15 1/2 oz) German chocolate cake mix
2 eggs
1 t vanilla
1/2 c chocolate chips
1/2 c peanut butter chips (optional)
1/2 c chopped nuts (optional)

 

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix cake mix with eggs, oil, and vanilla.
  3. Add chocolate chips.
  4. Add peanut butter chips (optional).
  5. Add nuts (optional).
  6. Drop by tablespoonfuls onto ungreased cookie sheets.
  7. Bake for 8-10 minutes.
  8. Cool on cookie sheet for 2 minutes, then cool completely on wire racks.

 

Servings: 2 dozen

Prep Time: 10 minutes

Cook Time: 8-10 minutes per sheet

Total Time: 30 minutes

WHITE CHOCOLATE CRANBERRY COOKIES

 

 

Ingredients

1/3 c butter, melted
1/2 c brown sugar, packed
1/3 c sugar
1 egg
1 t vanilla
1 1/2 c flour
1/2 t salt
1/2 t baking soda
3/4 c dried cranberries
1/2 c white baking chips

 

Instructions

  1. Preheat oven to 375 degrees F.
  2. Spray cookie sheets with cooking spray.
  3. In a large bowl, beat melted butter, brown sugar, and sugar until crumbly, about 1 minute.
  4. Beat in egg and vanilla.
  5. Combine flour, salt, and baking soda in medium bowl and then gradually add to butter mixture, mix well.
  6. Stir in cranberries and chips.
  7. Drop by tablespoonfuls onto prepared cookie sheets.
  8. Bake 8-9 minutes, until lightly browned.
  9. Cool for 1 minute on cookie sheet and then completely on wire racks.

 

Servings: 2 dozen

Prep Time: 15 minutes

Cook Time: 8-9 minutes per sheet

Total Time: 33 minutes

Angel Cloud CookiesI love this time of year: getting together with family and friends, giving gifts, and sharing our favorite things. One of the favorite things I like to share and have shared with me are recipes.

Today I’m sharing one of my new cookie recipes that has already become a favorite with my husband, family, and friends.

 

ANGEL CLOUD COOKIES

 

Ingredients

1 pkg (16 oz) angel food cake mix
1/2 c water
1 1/2 c sweetened flaked coconut
1 1/4 c slivered almonds

Instructions

  1. Preheat oven to 325 degrees F
  2. Line cookie sheets with parchment paper
  3. Beat cake mix and water in large bowl with electric mixer at medium speed 3 minutes or until fluffy.
  4. Add coconut and 1 c almonds, beat until combined
  5. Drop by tablespoonfuls of dough 2 inches apart onto prepared cookie sheets. Sprinkle tops with remaining 1/2 c almonds.
  6. Bake 18 minutes or until bottoms are golden brown.
  7. Cool 1 minute on cookie sheets. Remove to wire racks to cool completely.

Servings: 3 dozen

Prep Time: 10 minutes

Cook Time: 18 minutes per sheet

Total Time: 28-64 minutes
