12 Days of Recipes: Melt-In-Your-Mouth Gingerbread Cookies

Soft Gingerbread CookiesI love this time of year: getting together with family and friends, giving gifts, and sharing our favorite things. One of the favorite things I like to share and have shared with me are recipes.

Today I’m sharing one of my plain but tasty cookie recipes is a favorite with family and friends.





1 c margarine
1 1/2 c brown sugar, packed
2 eggs, beaten
1 T ground ginger
1/2 c molasses
1 1/2 c boiling water
1 1/2 t baking soda
5 c flour
2 t baking powder
1 1/2 t salt
1 T cinnamon
1 c chopped nut (optional)



  1. Preheat over to 425 degrees F.
  2. Cream margarine and brown sugar in a large bowl.
  3. Blend in beaten eggs.
  4. Mix in ginger and molasses.
  5. Stir in boiling water.
  6. Combine flour, baking soda, baking power, salt, and cinnamon in large bowl. Add to sugar mixture.
  7. Drop by teaspoonfuls onto ungreased baking sheets.
  8. Bake for 7-8 minutes.
  9. Cool for 1 minute on baking sheet, then cool completely on wire racks.


Servings: 5 dozen

Prep Time: 10 minutes

Cook Time: 7-8 minutes per sheet

Total Time: 45 minutes
